Ingredients:
- 14 to 16 small Italian meatballs (See Mama’s Meatball Recipe)
- 2 large celery stalks
- 2 large carrots
- 4 garlic cloves or more to taste
- ½ to ¾ sweet onion
- 2 cups chopped spinach (or escarole)
- 2 tablespoon extra-virgin olive oil
- 48-ounce low sodium chicken broth (6 cups)
- ½ lb. orzo pasta
- 2½ tablespoons of Mama’s Italian Seasoning
- 1½ teaspoons of fine sea salt or garlic salt or more to taste
- ½ teaspoon of white pepper
- ⅛ teaspoon of fine crushed red pepper or cayenne pepper
- 2 tablespoons of grated pecorino cheese or parmesan
How to Make:
- Chop or mince the onion, garlic, celery, and carrots
- Bring chicken broth to boil then simmer and add the minced vegetables
- Add Mama’s Organic Italian Seasoning, Garlic Salt and White & Red Pepper per above and stir. You can use black pepper if white not available.
- Add the meatballs
- Add ½ cup of Orzo and stir
- Add 2 tablespoons of extra virgin olive oil and stir
- Let simmer for 5 minutes stirring occasionally
- Add the chopped spinach (or escarole)
- Stir in 2 tablespoons of grated parmesan cheese
- Let simmer 5 minutes
- Let sit for 5 to 10 minutes to thicken and add more salt or pepper to taste if needed
- Chop or mince the onion, garlic, celery, and carrots
Note:
This will serve 6 people. Be sure to add parmesan cheese in your bowl too and dunk your Italian bread! If you reheat the next day, you’ll need to add more chicken broth.
Quick Version:
You can put the onion, celery, carrots, and garlic cloves, with some of the chicken broth in a blender all at once, add to the pot, add remaining ingredients, and bring to a boil etc.
